Recipe for Dalgona Candy also known as Korean Sugar Candy and Poppgi:
Ingredients:
2.5 tbsp of sugar
pinch of baking soda
Directions:
1. Prep: Place a small sheet of baking paper on your countertop. Then prepare a bowl of hot water. Next, lightly oil the bottom of a one-cup measuring cup. Lastly, have a pinch of baking soda and a cookie cutter ready.
2. Turn your stove to medium-low heat.
3. Melting the sugar: For gas stovetops, place the sugar in a stainless steel ladle. For electric or induction stovetops, use a small saucepan. Stir constantly with wooden chopsticks until the sugar is melted and turns a light amber color.
4. Remove from heat, add baking soda, and mix vigorously until fully incorporated about 7 seconds.
5. Pour the candy onto the baking paper in either one or two circles. Then place chopsticks and ladle/saucepan in hot water.
6. Immediately press the candy with the bottom of the measuring cup into a thin, even layer (about 1/4 inch thick).
7. Rest the measuring cup on the candy for a few seconds, then remove the cup and quickly press a design using a cookie cutter. Repeat the process if you have a second candy.
Notes:
* Caution with Sugar Melting: Take your time to melt the sugar taking it off the heat or reducing the temperature dial as needed; once the sugar burns, there's no way to reverse it.
* Efficiency is Key: Work efficiently after removing the melted sugar from heat to prevent premature cooling, which may hinder the shaping process.
