Ive made this from scratch before. Took me several days. The final product was probably the best thing ive ever put into my mouth. As a chef, when you finally create something so amazing after hours and hours of labor, and are able to get such an amazing physical experience out of it, it truly feels like the best thing in the world.

The butter has been clarified. It is essentially oil. It has 0% water content. That would be the same with ANY butter. Once you melt it and let the water and milk solids sink to the bottom the clarified butter on the top (also known to many as Ghee) is 100% fat.
