I beg you! … Do not remove it, Sear or BBq it skin side down and you’ll have an amazing crisp with tons of flavour

Was a butcher some time during college and was taught how to do this. The manager left and I had to do 2 more and didn't quite remember every step and was super nervous. I legit just youtube'd it and got it on the first try. Surprisingly doing this to salmon is super easy.

Chef bits are the best part of cooking. When I cook for friends I always serve myself last because 1) duh and 2) by the time I get to myself im not even that hungry anymore.

the remains of the meat on the bones can be gathered with a spoon, then you cut and press the meat till it becomes cream like, you have to remove the fat fibers, because you can choke on them, and then you got a creamy salmon paste both in taste and texture ;)

Would have liked to see how you remove the spine. Also we were taught to keep the head attached so you have something to hold on to while you're working through the bones, although our knives weren't anywhere near as sharp as yours 🤣 And we mostly did salmon if that matters

Nice but he messed up the skin removal, thats why its edited. One more note, extra careful when removing the guts not to burst them or the bloodlining inside the gut. Also there's slot of meat in the head that we use
