Can it be any type of eggs or they have to be like pasteurized? I also can only have coconut aminos, that's my soy sauce replacement, would that be okay here? Sorry if its a dumb question, just started learning to cook for myself and in interested in trying this.

Trust me, an Asian cook, more than 10 minutes into the soy your egg will be solid. Definitely don’t need overnight.
