Amaranth Apple Bread
Serves: 6-12, Prep: 5min, Cook: 45min

Ingredients
½ cup mixed raw and unsalted nuts
2 cups amaranth flour, sifted
2 tsp. baking soda
1 + 1⁄2 cup granny smith apple; grated
1 cup extra virgin olive oil
2 tbsp agave nectar (or honey)
3 eggs
1 tbsp. lemon juice
1 tsp. vanilla essence

Method:
1. Pre-heat the oven to 180C.

2. Process the nuts in a blender until coarsely ground.

3. Add the flour, baking soda, apple, oil, agave, eggs, lemon juice and vanilla. Mix until well combined.

4. Pour into a greased 9x5" loaf pan or two 7x3" pans and bake for 45 minutes. Let it cool and serve.

Tip: for a protein-packed breakfast serve this bread with 1 tbsp nut butter or cottage cheese!
