First time smoker here, when you say cook to temp. Do you check the temp during the different stages of the cook at all or just at the end? Or do you just use the 2-2-1 method at 225 and know by experience this will get you 90% there and check periodically in the last hour of the cook? Love your content.

Hello, really appreciating all the videos. I am new to smoking, so I have been following you for some great tips. My first cook was pork loin, and it turned out fantastic. Your recommendations on rubs and such have been awesome and it’s nice seeing products I never heard of.

My second cook was baby back ribs. I followed this video but I had an issue maybe you can help me with. I did the 2-2–1 method and everything seemed to go well. Everything looked good, but when I wrapped them, and then went to sauce, my heat was stuck at 150.

Any tips for this newb to get a better product on this next cook. These eventually were done but just not where they should of been. Thanks!

What temp were these cooked at? The smoke setting?

Just bought the same smoker and I’m gathering knowledge! Just wondering why you didn’t use the probe that came with the smoker?

I take my ribs out of the smoker just a little early and put them in my instant pot fans pressure cook for about 20 -25 minutes, natural release for 15 min and when you take them out - the meat just falls of the bone .
