Chipmonk Baking Keto Cookies Review - all 6 flavors!

Chipmonk Baking is not "Big Keto". They are a small, two man operation out of Houston, TX that started when one of the co-founders, Jose, learned that he had type 2 diabetes. Jose and David are super cool guys and I love their story, which you can read on their website (linked below). They sent me a variety pack of their cookies to review, which is what this video is all about.

Steve! Thank you for the thoughtful review of our cookies! We truly appreciate you taking the time to share your thoughts. A couple of notes after watching through the video:
1. All of our cookies do have monk fruit extract in them as well, so allulose is not the only sweetener. Monk fruit is incredibly sweet in small quantiites, so there's just a small amount in each cookie and we didn't include it in the net carb call out on the nutrition label. It is listed in the ingredients for each cookie though, and we consider it a big contributor to the sweetness profile of our cookies
2. Our chocolate chip cookie is our one Vegan cookie. It's 100% plant-based and instead of butter and eggs we used chia seed, flaxseed, and coconut oil. The chia seeds are probably the little "pops" you tasted. The consistency of the cookie is pretty different from our others, but we wanted to make sure we offered a cookie option for our vegan / dairy free Customers :) We'll keep working on the recipe though!
3. Good call about the coconut flakes in the coconut cookie. We actually do toast them already, but maybe we need to be toasting them more. We'll experiment with this asap.

Thanks for this review. I don't feel that I *need* a cookie! Funny, how that when you quit all that sugar in the gut, how it just doesn't "grab" you any more! But, I've stolen a small bite a couple of times of a bread or chip, and, really, it's just not as good as I remember! Yay for the keto diet, and the health that we enjoy! I just to my truck terminal to pick up my order of cookies today. My better half and I split a chocolate chip. OMG they are delicious. Definitely a treat and not an everyday option at their price point but I see myself ordering again. We got the Variety box, a box of Peanut Butter a box of Lemon. I bought these cookies and they are quite good! Dense but very flavorful and better than I have been able to bake! I have tried allulose in my cookies but can’t begin to compare to this!

I got the 4 trial pack- chocolate chip, lemon, macadamia nut and peanut butter.
Hands down my fave was lemon. AMAZING. But they were ALL great!

I love these cookies! I freeze them so I don't over eat. I just purchased the mixes because the ready made are pricey. My only gripe is that the portion sizes are becoming smaller and the price is increasing which is going to prevent me from purchasing more.
