Salmon patties, stewed potatoes, granny green beans
DO YOU REMEMBER that good old southern cooking?
If you learn to cook like my mama and granny, you will become one of the best Southern cooks. Thank you so much for being a part of this dream of mine.
NOW FOR THIS FAMILY RECIPE:
Salmon Patties (Vol. 1 Cookbook Recipe)
14.75 OZ. CAN ALASKAN PINK SALMON
2 GREEN ONIONS MINCED
1 RAW EGG
1/2 TSP. SALT
1/4 TSP. PEPPER
1/2 CUP SELF-RISING FLOUR (WHITE-LILY)
1/8 CUP SELF-RISING CORNMEAL MIX
OPTION: 1/2 TSP. CAYENNE PEPPER
SKILLET COOKING OIL Open salmon and drain Put salmon in a large bowl. Pick out bones and skin and discard. If you like a fishy taste, leave in the skin and/or bones. Add remaining ingredients and mix well with a fork. Put oil in skillet about 1/2” high. Oil must be HOT. Put a small amount of batter in oil and once it floats and sizzles, grease is hot and ready! Turn oil on medium heat. Use 1/8 cup of batter for each patty. Place each clump of batter in the skillet and fry 3 minutes. Flip it, take a fork or spatula and press patties well. Fry 2 more minutes or until brown. Take out with tongs and place on a paper towel covered platter/plate. Serve with two vegetables.

My mom and grandmother made their stewed potatoes with just milk and butter. She'd spoonn some of the water out before adding the milk and butter

Yummmm…salmon patties! We always had salmon patties, French fries or soft-fried skillet potatoes, and English pea salad! One of my favorite meals! Mama would remove the dark skin, but she would leave the bones. They’re super soft and are full of calcium; good for you! Thank you for the yummy memory! ♥️🥰

My mom always mashed the skin and soft bones in with the other things she added (corn meal OR cracker crumbs, an egg, and a little finely chopped onion). Never knew skin and bones were in there. A lot of nutrients in those.

We leave bones in that is what my Grandmother did. But we eat what was before us. Eat or go hungry.

In Michigan, mom called your stewed potatoes, creamed potatoes. Your creamed potatoed, mashed. The cooked, unmased, that you just salt and pepper, add butter, we called boiled potatoes. Love your show. Watching a long time.😊

I have started buying salmon in a smaller can, the can looks like a tuna can, anyway it doesn't have bones or the skin on it. To us it was much better. The really good thing is my husband will eat it. But we don't make them often, We make make tuna patties, same recipe, but different fish.

We jar (can) wild salmon in quart jars here in Alaska, momma and daddy both were excellent cooks. Momma put everything including the skin in her salmon patties, they were excellent. Daddy made a salmon rice pie with jarred (canned) salmon, it was cooked short grain rice, salmon, cabbage sauteed with onion and soy sauce layered in a pie shell with a top crust. Absolutely excellent.
