Chef/Owner EXCHANGE ALLEY

First Demo Reel for "Work The Line"

WTL:
Native New Yorker and well seasoned career chef Paul Gerard takes us on a guided tour of the rarely seen culinary underworld to glimpse the blood, sweat and beers of line cooks- the unsung heroes that are the embodiment of the suffering behind every chef's passion. Putting his earned title aside Paul Gerard will join the ranks and "Work the line" at some of the world's busiest, and well regarded restaurants, giving the viewer a backstage pass to the grueling conditions, off the wall antics, and battlefield camaraderie that is unlike any other job people have ever experienced.

I used to watch this every night when I was a dishwasher trying to become a cook. Now, 8 years later, I've learned and accomplished so much in the back of house. I like to come back every few years to remember where I started. Just a kid with a dream.

I'm to fast for my own good bartender waiter to line cook. Started off as a kitchen assistant been in hospitality for 5 years. I love it. When some try flex on you and your like man you as a kp got life easy I thought making bread, plating up desserts and meat platters was normal kp stuff. 3 rosette establishment is another level would love to be a cook in one before doing my own thing

Roguemember calls chef a douche. Dude if you only knew what that man is capable of doing to you beside the dumpster. You know why real street fighters (and competitive fighters) don't talk shit? The same reason piranhas don't attack each other. They know what they themselves are capable of, thus they know what the others are capable of as well.

Line cooks are idiots. You can make more per hour plus benefits, and less hours and stress working in kitchens in retirement communities.
