Today I will be sharing with you healthy vegan BBQ lettuce wraps with coleslaw. This recipe is protein rich and great for weight loss. The full recipe and macros are below.

RECIPE FOR BBQ SAUCE
Ingredients:
1 cup tomato paste
1/2 cup veggie broth
2-3 Tbl maple syrup
2-3 Tbl molasses
3-4tsp apple cider vinegar
1/8 tsp liquid smoke
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
Add all ingredients to a bowl, whisk

RECIPE FOR BBQ LETTUCE WRAPS WITH COLESLAW
3/4 cups soy curls
1/2 cup veggie broth
1 cup BBQ sauce
1 cup red cabbage shredded
1/2 cup shredded carrot
2 tablespoon chopped onion
2 to 3 tablespoons mayo
5 large romaine lettuce leaves ( or whatever you have)
salt and pepper to taste
INSTRUCTIONS
Place the soy curls in a bowl and pour enough veggie broth onto the soy curls to just cover them. Let sit for 10 minutes
While you are waiting for the soy curls to rehydrate, add the red cabbage, carrot, onion and mayo into a bowl and mix well and add salt and pepper to taste, then place in the fridge until you are ready to serve.
Next take the rehydrated soy curls and place in a preheated non stick pan on medium heat. Make sure there is no more than a 1/4 cup of liquid in the soy curls, If there is drain it off until only 1/4 cup is left. Saute the curls for a few minutes until all of the broth is absorbed into the curls. Next add the BBQ sauce into the pan and cook for another 5 minutes on medium low to make sure the flavor really gets into the soy curls.
TO ASSEMBLE
Distribute the soy curls evenly into the 5 lettuce leaves and top each one with the coleslaw. Depending how big or small your lettuce leaves are you may need more or less of them.
