We're making two vegan pasta recipes today, both with delicious vegan cream sauces. First up we have a vegan mushroom stroganoff, and then we're making a vegan cacio e pepe pasta. Both of these recipes are great for vegan meal prep, they can be enjoyed as a quick dinner recipe and they taste delicious!

Add 2-3oz of dry red wine when you coat the mushrooms in flour. It’ll reduce and make the roux much more delicious, thus making the sauce delicious overall. Most traditional stroganoff recipes use red wine or brandy but the most important ingredient is worcestershire sauce right before the “cream”. You could use amino acids for this instead.

This is great for me. I’m a young guy who never really thought much about cooking, but really bad food restrictions have recently forced me to go full vegan. It’s been a bit overwhelming since I’ve never really cooked before, let alone cooked healthy. But I’m going to try these recipes tonight!

Edit: I did it! I made a few mistakes, and had to substitute some ingredients. But was easily the tastiest thing I’ve ever cooked lol. Thanks so much!

I made this stroganoff on Sunday! I used vegan cream cheese that was tofu based for my cream. My family loved loved loved it

I made the stroganoff over the weekend, a week or so into attempting a vegan diet. This dish was a total revelation to me - that vegan cooking can be easy and delicious at the same time! Going to try the cacio e pepe this week. Thanks for sharing such a great couple of recipes!

Made the mushroom one today and it was divine. I used rice flour and subbed coconut yogurt for non-dairy oat and coconut milk half and half I found at Walmart. Also added some fresh parsley and green onion in place of the thyme. Highly recommend, thank you!

Omg!! I just made the vegan stroganoff....and it is so good!! I used to eat this alot when i used to eat beef...it's now that i don't it's nice to eat a vegan version of my favorite pasta dish.thank you simply quinoa...will be making these pasta dishes again!

Just did the Mushroom Pasta. I didn't have mushrooms but I substituted it with Zucchini. Came out delicious!! Thanks for sharing❤

I just made the pepper sauce and loved it!!! Thank you!!! I would personally recommend to not go beyond 1/2 table spoon of pepper corns though :)

I make up a batch of sauteed garlic, tomatoes, and zucchini with Herbes des Provence, and smoked paprika. I will add a bit of stock or a splash of white wine to this and then toss in some hummus which thickens it up beautifully and really enriches the dish. Then I toss in some soba noodles which I had cooked earlier. Yum.
