If you are taking it to 120 internal and then searing its going to be over cooked. I do steaks on the smoker. I smoke them as low as possible until 100 internal. Then I take them off and rest for 10 mins. While they are resting I turn the smoker to the highest setting and then finish them off until internal is 120ish.

Steak looked like a pork chop I'm fucking dead 💀😂😭 Definitely would have restarted this one 😂 That pan needed to be maintained at about 450 - 500 for this method, which would require clarified butter. Considering that the regular butter used here didn't immediately smoke and burn, I would say this pan was clearly not hot enough to avoid overcooking trying to get the sear. 450 - 500, sear for a minute per side so you don't overcook, and voila.

Honestly he did everything right but that steak had a lot of moisture in it (color prior to cooking indicates should be red not pink) a dry brine for a few hours in the fridge prior to cooking will remove water and make fire more red center and far better sear. Not claiming to be a meat expert just a dude who loves to cook steaks and have learned through trial and error 🤝

Your pan wasn’t even close to being hot enough. You tried to compensate for that by cooking longer to achieve a sear that never really happened, thus overcooking the steak.

definitely take the thermometer out when you go to sear, and press the steak down into the pan all over, using some kinda weight to hold it down helps a ton as well! great medium rare though im sure that was tender as can be! next video is gonna be fire!

Also notice how it curled. I’d recommend using a meat mallet and push down the edges to break the fibers a bit. It’ll release the tension and won’t make it curl. Makes for a perfect sear every time!

Step 1 cook it to 113 as it will continue to cook when it rest and when you sear it. If you cook it to medium rare what’s going to happen when you sear it….

Let the pan get hotter. Oil in the pan and get it really hot. Then butter the whole bottom of the pan. Put the steak on and give a firm press down
