I would agree 100% to this “reverse sear” method. Prep to the cut prior to and after the cook are also to be considered equally important if your looking for similar results. Just my opinion after 22 years of cooking. I hardly eat “steak” cuts of beef these days though.

What's funny is that this explanation came from a conversation where Joe Rogan rejected the notion that cooking steak is more complicated than other meats. So his guest asked him how he prepares his and this was Rogans walk through for the very easy way to cook steak.

- Canola Oil (not too much)
- High Heat Skillet
- Sear Top Sirloin on both sides until browned
- Low Heat and add Butter
- Salt, Pepper, Garlic Powder, Onion Powder into Melted Butter
- Move Steak (I use a fork) until seasonings are thoroughly mixed in skillet
- Pour all the juice in the skillet onto a plate and use the Steak to get any seasoning left behind in the skillet (again I use a fork - very little cleanup)

It’s really easy just stick it in the bbq after it’s had 10m to get up to temp (lid shut), then grill it 2m each side (lid shut) if it’s an inch thick. Adjust for thickness. Always buy same thickness steak so you can get that consistency. Lots of seasoning pre cooking, look for marbling when buying. Rest for at least as long as you cooked. Done. It’s no harder than that.

I do something similar when I cook a steak, basically low heat for 8 minutes each side then crank it up high to sear all sides, I just use butter and sea salt.

If anyone wants a resting tip what I do is sear the steak with salt freshly ground pepper and garlic powder in Avacado oil then put in a stick of butter baste and bathe it in butter (usually take it out at about 105 to 115 but I cut it in the middle to make sure it’s not deep red) then get aluminum foil and wrap the steaks and pour the butter oil mixture in the foil then wrap it with a few sheets. Keep checking in on it and after a bit of time depending on the thickness of steak you’ll have a wall to wall medium rare with a ton of flavor. Also flat iron steaks ftw I’ve cooked probably all cuts of steaks and a nice thick flat iron is the best you’ll get imo. Even if you over cook it and it’s a medium or medium well it’s still juicy and flavorful. With that method you’ll sacrifice some of the crust for a super juicy and flavorful steak. If you do it right you won’t lose a lot of the crust either

The reverse here is an excellent method for cooking steak. He's also doing 2 really important things using a meat thermometer and letting the steak rest.
