Carrot Cake Cupcakes
These are the easiest carrots cake cupcakes ever! I usea @xobakingco.-glutenfreebaki8795 carrot cake mix. It makes the perfect cupcakes.
To take them up a notch I added a cream cheese filling. They are so delish! XO Baking has an amazing lineup of baking mix pantry staples.
Ingredients
1 pkg XO Baking Carrot Cake Mix
Make the carrot cake mix according to the box's directions.
Line a cupcake pan with liners or spray with baking spray.
Add the mix to the cups and bake for 18-22 minutes. A toothpick should come out clean when inserted halfway.
Allow to cool completely.
Filling
8oz cream cheese, room temperature
½ cup powdered sugar
1 tsp vanilla extract
½ orange juiced
In a bowl add all of the filling ingredients and mix until smooth. Poke a hole in the center of the cupcake and remove the inside, fill with cream cheese filling.
Cream cheese frosting
14 oz cream cheese
11/4 cup of butter
4 cups of powdered sugar
2 tbsp milk

Well it's about time somebody comes up with the recipe for a pecan instead of a walnut which I'm allergic to and I love carrot cake the only one that made me become carrot cakes was my grandmother she's no longer with us so thank you
