You’re gonna need:

- [ ] 4-5 sausages
- [ ] olive oil
- [ ] one small onion or alternatively half of a slightly larger onion
- [ ] 2 tablespoons of tomato paste
- [ ] 5 average size carrots
- [ ] 0.5-1 kg of potatoes
- [ ] 2 cloves of garlic
- [ ] roughly 6 centimeters of tarragon
- [ ] a similar volume of basil leaves (preferably fresh)
- [ ] various optional spices that will be detailed later


Throughout the process, remember to stir regularly to make sure that nothing sticks to the bottom of the pot and burns!

First, slice the sausages into ~1cm thick slices. Put them in a pot with one tablespoon of olive oil and fry them over medium heat while you finely chop the onion.

Once the sausages have cooked a little, throw in your onions and stir it. Here you can also add a few slices of carrot to roast for some extra flavor if you want.

When the onions have turned translucent and browned little, throw in your two tablespoons of tomato paste and stir it in.
Boil about 3/4 to a liter of water and add that into the pot once it’s done.


Next, peel your vegetables, dice the potatoes and cut the carrots into slices. They both have to be cut into relatively small pieces, but the carrots especially, otherwise they’re not going to be cooked at the same time. Add them in after about 3-5 minutes of boiling, along with a teaspoon or two of salt! It’s going to vary based on how salty your sausages are, so taste the soup liquid to determine it. You’re going to want it to be a little bit saltier than what you want it to taste like in the end, as the potatoes absorb a lot of salt.


Peel the garlic and cut it as finely as you can for maximum flavor. Do the same for your tarragon and your basil and throw them all in. At this point, all that’s left is some seasoning, which is gonna depend heavily on your personal tastes.

If you (like me) don’t have too much experience cooking, coming up with your own seasoning combo can seem daunting, but it’s actually not that hard! Generally, as a rule of thumb, stuff smells the way it tastes, so if the smell of the spice and the smell of the soup go well together, they’ll probably taste good. Here’s a list of compatible seasonings from my experience:

- Dill
- Pepper
- Turmeric
- Cumin
- Lentils (not a spice but still an acceptable garnish according to my mom)
- Bay leaves

The soup is done once the potatoes are soft enough that you can poke a hole in them with a fork. You can also try them yourself, and they’re done when you feel satisfied with the consistency.
