To help everyone else here: Place lamb in a roasting pan fitted with a rack.
Transfer to oven and roast for 3 to 3 1/2 hours to an internal temperature of 140 F (60 C).
Remove from oven.
Heat oil in a large skillet over medium-high heat. Sear the roast until evenly browned and crisp.

I made this roast for Christmas Eve dinner. This recipe was so good. I made a cranberry pomegranate sauce for it. Mmmm it was delicious. Great recipe chef. 🙌🏼😊

This video was cringe, the guy's smile is cringy af and his acting is terrible, he looks like hes trying and failing to be an actor rather than be a chef. Food looks ok but the twining could have been much cleaner and uniform, underseasoned however. Having the marinade on the outside straight to the oven is a bad call since it wont brown the meat well and will 100% burn the marinade, instead of a flavorsome topping it ends up being a charred mess, its better used after roasting as a garnish. Also reverse searing is not the best technique for cooking meat, sous vide is.
