I cook bigger portions so it lasts me 2-3 days. Suitable for freezing

1.5kg chicken thighs skinless and boneless
4x potatoes
4x carrots
4x celery sticks
1x parsnip (optional)
3x courgette
2x onions
3x garlic cloves
0.5 litre chicken stock
handful of your favourite herbs -I used fresh rosemary and lemon thyme at the beginning and handful of parsley at the end
