Just an update: My family loved these lemon bars. I made an adjustment on the amount of sugar in the recipe because some members in my family are diabetic so I only used 1/4 cup of sugar, added a little more lemon juice and zest and they came out fantastic. By popular vote from my family members, this recipe  is now added to our Thanksgiving tradition. Thank you Chef John and blessings to all.

I just tried those. Simple to cook and totally amazing, tastes like something I'd pay good money for. But a single recommendation to others that might try this recipe: put a little less sugar into the lemon layer or be ready with some tea, because they're going to be very sweet. Right after you take the pie out of the oven, the top layer will be soft, but it doesn't mean it's not ready - the top will dry up and become firm when it cools off. Oh, and the meringue is mandatory, I'm telling you, it goes so well with the sweet lemon flavor.

I’ve been making these lemon bars for the past five years. I’ve also switched out the lemon for lime and used just the crust recipe to make cookies! My family really loves them every time.
