I've braised mine in garlic, olive oil, butter, and white wine, then topped it off with a splash of lemon. My wife said it was the best she's ever had.

I have been braising them forever. I add a little onion powder (salt & pepper) to the water oil mixture and skip the lemon. Just a touch of butter at the end.

I stir fry mine in butter, garlic, salt & pepper. As soon as they turn a lovely deep green they're ready. Delicious and crisp; never soggy.

Exactly how I've always done them, except I dress them with salt, pepper, lemon, and butter. Or sometimes Mom's mock hollandaise sauce (mayo plus lemon juice---hey, it was the 60s). All Clad 3 quart saute pan works great for braising a pound of asparagus.

Agree with everything but adding water. I use butter & EVOO, add garlic and just sauté. We like a little bit of tooth to our asparagus, while not loosing any vitamins.

Anyone who grew up in the Pioneer Valley, alongside the Connecticut River, knows asparagus tastes best raw, right after it's pulled out of the ground. Hadley grass it's called. But braising is 2nd best esp. peeled. I peel broccoli stalks also and the sliced stalks are sweeter than the florets.

Very close to my method. Trim them, peel them, then blanch them in boiling water about 5 minutes. Plunge them into an ice bath and they're beautifully green and ready to warm in butter, lemon and herbs of choice

Butter, salt, pepper on top. Lid on - cold water. When water comes to boil, turn off immediately. No need to peel as asparagus should remain crispy and crunchy.

I grill mine with olive oil and garlic and salt.... I should try peeling it but that smoke flavor from the grill is awesome.

Hey, what’s your name.. i’ve been noticing you and you’re worthy of my attention and one recipe. Simply put -asparagus deggs!
Rice the cooked egg yolks, and moisten with plenty of softened butter add the cooked and milled stem of the asparagus. Refill egg whites, garnish with braised tip. You’re welcome

My mom used to cook them like that. I hated them. It was only later in life that I discovered them broiled or quick sauteed

That's exactly how I do them, except when they're 90% done, drain any remaining water and replace with a big knob of butter, finish them in that
