A great tip with the lasso tool that is kind of hidden: with the lasso tool selected you can press "alt" and it will turn into the polygonal lasso tool, if you draw normally it will act like the lasso, if you pick up the pen or release the mouse button it will act like the polygonal tool. This is really helpful if you are lassoing and need to give your hand a break, as you can let go and it won't close the selection until you release 'alt'. It works for adding or subtracting from the selection too (press shift then alt, or alt, release and alt again).

This has all the best tricks of the trade for cutting anything out in Photoshop. You did kind of go a bit fast over the steps. It was difficult for us mere designer mortals to keep up.
