Cobbler 1 ½ cups 1:1 GF flour - all purpose flour 1 tbsp baking powder ½ tsp ground cinnamon ½ cup sugar 1 tsp vanilla extract ½ tsp kosher salt 8 tbsp cold butter ¾ cup buttermilk 1 cup Fisher Pecans, Chopped
Pecan Pie Filling 1 ½ cup light corn syrup 2 tsp vanilla extract ¼ tsp ground cinnamon 3 eggs, room temp ¾ cup light brown sugar, packed 2 cups Fisher Pecans, Chopped ⅛ tsp ground allspice ½ tsp kosher salt
Preheat the oven to 375 degrees F. Butter a 7x10 baking dish with butter (at least 2 ½” high). In a large bowl add all of the pecan pie filling ingredients. Mix well and pour into the baking dish. In a separate bowl add the cobbler dry ingredients, mix well. Add the butter and with a pastry cutter, cut the butter into pea sized crumbs. Add the wet ingredients and mix until incorporated. With a scoop, scoop this is a typo equal sized amounts on top of the pie filling. Bake for 40-45 minutes or until golden brown.
