I smoke some Pork Country Style Ribs on the Kamado Joe and use Kosmos BBQ Rub with Not Ketchup Blueberry White Pepper sauce. This turned out fantastic!!!

what internal temp do you use to know there ready? I've heard 145-190, but mostly about 150.

I ordered a bunch of KosmosQ stuff based off a video you did (I thought, but now I can't find it). Anyway, I soaked two racks of pork spare ribs in their Pork Soak (basically a brine made of 3/4 cups of their mix, 32 oz of water and 32 oz of apple juice). After two hours I rinsed them and patted them dry, then coated them with their Dirty Bird rub...then put them in a pit barrel cooker for two hours (spritzing them with apple juice every 30 minutes). Once they reached 165 degrees I put them in a tin foil pan and wrapped them for the trip to my buddy's house where we put them in his oven at 165 for about another hour while we cooked other stuff. Wow! That KosmosQ Pork Soak made the best ribs I've ever had. I got so many complement on the ribs, everyone loved them and no one wanted to sauce them. I was amazed. I'll be using that method for pork ribs and shoulders from now on, thanks for turning me onto KosmosQ products!

Hi Troy, I'm checking out those country ribs you've got there.  Looking good!  I love blueberries so I may have to try out that not ketchup!  Thanks for sharing this recipe.  Hope you and Karen are having a great week!  I just got back from vacation myself.  I gotta get back to work now, making videos!  The great thing is, it doesn't feel like work!
