#VEGAN 🍫🍨 Chocolate Ice Cream with Chickpeas | I COOK 4 U

The base of this chocolate ice cream is made of chickpeas and dairy-free milk. The result is simply AMAZING! It just might become your new favorite vegan ice cream!
INGREDIENTS:
- 1 cup cooked chickpeas, rinsed and drained
- 2 cups unsweetened non-dairy milk such as soy or oat milk
- 2 tbsp cornstarch
- 1/4 cup cocoa powder
- 1/2 cup vanilla sugar
- 1 tbsp cashew butter or any kind of vegan butter
- 2 bars dark chocolate 70% cocoa
INSTRUCTIONS:
Preparation:
Melt the chocolate bars in microwave. Either break up or chop the chocolate into small even pieces and put them in a microwave safe bowl for 30 seconds or until the chocolate is melted, then set aside for while.
Make the ice cream:
Combine soy milk, cornstarch and cocoa powder in a small sauce pan and whisk together.
Bring the mixture to a simmer while stirring continuously.
As soon as it begins to simmer reduce to low heat, stirring constantly and cook until the mix thickens. Once it looks similar to pudding, remove the sauce pan from the heat and set it aside.
Combine chickpeas, soya milk, vanilla sugar and cashew butter in a mixing bowl and blend until everything’s completely smooth.
Add the melted chocolate into the mixture and blend again until it’s fully combined.
Transfer the ice cream to a freezer safe container and freeze for 2-3 hours or overnight.
Once the ice cream freezes it will be very solid. Take it out the freezer about 20-30 mins before serving.
