Mexican Chicken Casserole Ingredients:

2 lbs (3 medium or 4 small) chicken breasts, halved

Salt and Pepper, to taste

8 oz (3 cups) shredded Mexican cheese, divided

1 cup sour cream

14 oz diced green chilis (two 7 oz cans) with their juice

🥘Casserole Toppings To Serve:

1 small avocado, diced

1 roma tomato, diced

Cilantro, chopped

I am Mexican and I tried this today. I was a little skeptical because I hate cooking chicken breast. They always come out too try for me. (picky eater) I followed your recipe except I doubled it since we are a family of 7. I AM IN LOVE with this! It was perfect! I added serrano peppers on top and broiled it for 5 mins, we love spicy food. I paired it with a riced cauliflower Spanish rice style and a cilantro salad with green chile very spicy dressing. This is going in my regular rotation! Thank you :)

My Aunt Orleatha gave me the perfect pie crust recipe! I had trouble with mine breaking in pieces or being tough! This recipe rolls out beautifully and is flakey and tender!
5 cups of flour
2 cups of lard ( real lard)
Dash of salt
7 ounces of 7-up ( yep 7 Oz —this is not a typo)
Combine flour, salt and lard with a pastry blender. Slowly add the seven up and combine. Form into 3 balls and roll out- makes enough for a double crust and one single crust pie. Rolls out like a dream! Can also be frozen.

This recipe is absolutely delicious I’ve personally tried it my friend made it for me on a dinner occasion and I made it was wonderful I also did a version with shredded chicken with taco shells

Not a chicken recipe but my all time sweet recipe is Sopapilla Cheesecake.

INGREDIENTS:
2 (8 ounce) cans refrigerated crescent rolls
2 (8 ounce) packages cream cheese, softened
1 cup sugar
1 teaspoon Mexican vanilla extract (makes the difference)
3/4 cup sugar
1 teaspoon ground cinnamon
1/2 cup butter, room temperature (do not use margarine)
1/4 cup honey

DIRECTIONS:
Preheat oven to 350 degrees. Prepare a 9x13 inch baking dish with cooking spray or butter.
Beat the cream cheese with 1 cup of sugar and the Mexican vanilla extract in a bowl until smooth.
Unroll 1 can of crescent roll dough; flatten pieces like a crust into 9x13 inch pan.
Evenly spread the cream cheese mixture.
Unroll 1 can crescent roll on top of cream cheese mixture same as previous dough; like crust top.
Crumble together 3/4 cup of sugar, cinnamon, and butter. Dot the crumble over the top of the cheesecake.
Bake in the preheated oven until the crescent dough has puffed and turned golden brown, about 30 minutes. Remove from the oven, drizzle with honey. Cool completely in the pan before cutting into squares size of your choice. Overnight in frig makes for perfect cutting.
