Pesto Crumbed Tofu Caprese Ciabatta? Yes please!
This sandwich is everything you need and more to brighten your day. Taking only 20 minutes to make with the Cordless Mini Prep Pro.
Ingredients (Makes 2 sandwiches):
For the sourdough breadcrumb -
- 2 slices sourdough (staler bread works better!)
- 1 tsp mixed herbs
- 1/2 tsp garlic powder
- 1 tsp salt
For the hazelnut pesto -
- 50g hazelnuts
- 15g fresh basil
- 1 garlic glove
- 3 tbsp nutritional yeast
- 50ml olive oil
- 1 tsp salt
For the sandwich -
- 280g firm tofu, cut into 4 slices
- 1 tbsp plain flour
- 60g vegan cheese, grated
- 2 ciabatta rolls
- 4 tbsp vegan mayo
- Handful rocket
- 1 tomato, cut into slices
- Extra basil, to serve
Method:
STEP 1 Preheat your grill.
STEP 2 To make the breadcrumb, simply place the bread into the Cordless Mini Prep Pro and press the grind function to turn into a chunky breadcrumb. Add your remaining breadcrumb ingredients, blitz again and place into a bowl to set aside.
STEP 3 For the pesto, place all the pesto ingredients back into the Cordless Mini Prep Pro, holding down the grind function until you get a pesto-like consistency.
STEP 4 Dust the tofu slices with plain flour and season well.
STEP 5 Place a heaped tsp of the pesto onto each tofu slice and spread evenly, then dip each piece pesto side down in the breadcrumbs.
STEP 6 Place into a preheated frying pan with a good amount of oil and fry for 5 minutes to get some colour (on the plain tofu side). Drizzle a little oil over the top of the breadcrumbs and then place under the grill for two minutes to get a golden colour.
STEP 7 Sprinkle the cheese over the breadcrumbs and grill again until the cheese is melted.
STEP 8 For the sauce, mix together the mayo with 1.5 tbsp of the pesto.
STEP 9 To assemble the ciabatta, slice and slightly toast. Layer over the pesto mayo, rocket, tomatoes, the pesto tofu, and finally some fresh basil. Slice and enjoy.
