Every year, as autumn approaches and the villagers' tomato harvest becomes abundant, they begin making tomato paste for their annual consumption.
In the final days of summer, the scent of tomato paste-making fills the air from every corner of the village. Making homemade tomato paste, especially over an open wood fire, is a truly enjoyable task.
This tomato paste is prepared for year-round use. Once the tomato paste has completely cooled and been poured into sealed glass jars, it is essential to cover its surface with semi-solid or solid oil to prevent mold growth and ensure its long shelf life.
While I was busy making tomato paste, our neighbors were busy harvesting their own walnuts.
Harvesting walnuts from old, tall trees is quite challenging. To do this, one must climb up the walnut tree and strike the branches with a long stick to make the walnuts fall. In our local dialect, we call this "tul zani."
🔴 For every kilogram of tomato paste, you need approximately 10 kilograms of tomatoes.
