Dutch Oven Christmas Chicken & Mexican Rice

During our recent camping on the beach we came up with a Dutch oven chicken recipe that Abby called Christmas chicken since we used both red and green jalapeños. This along with some Mexican style rice ended up being a delicious meal that we’ll keep in our dinner rotation. The addition of the jalapeños not only added a delicious depth of flavor it provided a lot of moisture during the cook.

Looks yummy! One of my favorite dishes that Mom made was what Pop called "Ross con Pollo" i.e. Chicken and rice. What she did was put cooked rice on Aluminum foil with butter, with the Chicken Breast on top and then wrapped the foil over the top and then baked in the oven. Some veggies to go with it...
