If you dont want to do a Hold you can do a keyframe one arrow click before of the scale up key frame, this will jump from 100 to 125 and not ramp from 100 to 125.

thank you so much for this!! I have been creating an extra keyframe before the zoom to get this effect but this helps so much. I have wanted to know how to do this for so long but every time I try to Google how to do this Google had no clue what I meant by jump cut zoom fast trick haha!
