Brown Rice Fried Rice
Fried rice with lots of veggies is something I eat a lot these days as the veggies can fill you up and keep you full for a long time. I top the rice with a fried egg to make it a balanced meal.

I am on a dairy free diet. So getting calcium from other sources is very important. I eat ragi and sesame seeds everyday. I sprinkle toasted sesame seeds on everything. I keep a box of sesame seeds right next to the stove. Both ragi and sesame are rich sources of calcium. Whole sesame seeds are also rich in several B vitamins, iron, magnesium, calcium, phosphorus, and zinc.

I use quick cooking brown rice (Indian brands like weight watchers, charminar, Daawat etc... works just fine)
I fill the cooker with rice, lots of water and cook for one whistle. Let the pressure settle and then drain the excess water on a colander. I use the drain method for cooking whole grain rice to get rid of any arsenic residue from rice.
Instant Pot Method - Again cook rice in lots of water for 7 minutes. Rest for 10 minutes. Release pressure after 10 min and then drain.

If I buy quick-cooking brown rice, will I be sacrificing nutrients?
Not at all. Instant brown rice -- ready to eat in 10 minutes -- and the longer-cooking version are both whole grains. Compared with refined grains (including white rice), they contain more antioxidants, such as vitamin E and selenium; more minerals, such as potassium, magnesium, copper, and zinc; and more fiber. Because instant brown rice is parboiled, the outer husk or bran is open, which makes the grains more porous. That enables water to be absorbed quickly the second time around. It is lighter in color and has a fluffier texture.

This might be a silly question but does the rice have to be boiled before frying it?
