It’s called Supertonic because it means « above » the tonic.

Note choice simply depends on the chords underneath. All of the songs mentioned here use the ii chord, which subconsciously leads vocalists to use the root of that chord (the "Super Tonic" mentioned) since it will sound good. This isn't Secret Sauce, it's basic music theory

What?? Hotline bling is in the key of d minor so the supertonic would be E. Furthermore he only sings three notes on the g which basically just creates the a minor 7. There is no substance to this - at least not with the examples provided.

You made this needlessly complicated, and I'm almost positive you're wrong as well. The 5th in any scale is going to be the second most dominate note in the scale besides the root
