How to Make an All-Purpose Barbecue Spice Rub and Sauce

This all-purpose barbecue spice rub and sauce stores well in the pantry and fridge, and is great on a wide variety of barbecued and grilled foods, like ribs, chicken, or burgers.

FOR THE RUB:

INGREDIENTS

1/3 cup paprika
1/3 cup dark brown sugar
1/4 cup kosher salt
4 teaspoons ground mustard
2 teaspoons freshly ground black pepper
2 teaspoons ground coriander seed
1 tablespoon dried oregano
1 tablespoon granulated garlic powder
1 tablespoon granulated onion powder

DIRECTIONS

Combine all ingredients in a bowl and whisk together, using your fingers to break up any big chunks of brown sugar. Store in a sealed container at room temperature for several months.

FOR THE SAUCE:

INGREDIENTS

1 cup chicken broth
1/2 cup ketchup
1/4 cup dark molasses
1 small onion, grated on the large holes of a box grater
2 tablespoons Worcestershire sauce
1 tablespoon brown mustard
2 tablespoons cider vinegar
2 teaspoons hot sauce
2 tablespoons spice rub

DIRECTIONS

Whisk together all ingredients in a small saucepan. Bring to a simmer and cook until reduced to a thick, glaze-like consistency. Adjust flavor with more molasses, vinegar, or hot sauce to taste. Store in a sealed container in the refrigerator for several months.

I was just wondering your thoughts on removing the salt from rubs, so that you can brine (wet or dry) your meats?
