Lemon Keto Pound Cake Recipe

2 cups almond flour
1/2 cup coconut flour
8 large eggs, room temperature and separated
1/2 cup unsalted butter, softened
1 cup nonfat Greek yogurt
Zest of 2 lemons
1/4 cup fresh lemon juice
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Preheat your oven to 350°F. Line a loaf pan with parchment paper.

Whip egg whites to stiff peaks.

Mix together the softened butter and sweetener until smooth and fluffy.

Mix in the Greek yogurt, lemon zest, vanilla, and lemon juice until well combined and smooth.

Add the almond flour, coconut flour, baking powder, and salt to butter and lemon mixture.

Fold in the egg whites and pour the batter into loaf pan. Bake for 60-75 minutes, or until a toothpick in the middle comes out clean. If the top is browning too quickly, loosely tent with aluminum foil after an hour.

Let the pound cake cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely. Slice and enjoy your lemony, keto-friendly treat!

Just a small point. Whip the egg whites first. Then you don’t need another set of beaters or having to wash the ones you have. Looks good

Victor you should treat yourself to a stainless steel bowl to beat your egg whites. A Christmas gift to yourself ❤ Doesn’t hold any grease after washed. A trick is to spray a plastic bowl with vinegar and wipe well. Will remove all grease residue from the bowl. This pound cake looks good. I love anything lemon…yummy.

it just looks amazing!! as a side note...the browning wont be as much if people arent using allulose...and you could put a lil baking soda in there for more lift since u have an acid (lemon juice)... and the baking time will be a lot more different for those using a silicone or metal pan than your ceramic or a glass pan. im gonna try this tonight i think though!!! i have dried lemon zest...but i can add some lemon crystals if i need to. great video as always!!!

I wanted to share a tip with you that I've learned...I'm finding that whenever I add egg white protein powder to my baked goods, it gives it better rise; kind of like when you fold in egg whites. You might want to give it a try sometime!

I just LOVE Lemon pound cake and you ate my end piece...LOL I always get the end Ive had a few get to brown but still tastes good....I like this recipe real simple...can I use a full fat since I have it already its a high protein like yours?
