It provides a good source of fiber, selenium, and protein.
This recipe is quick and simple and perfect for a light dinner.

Recipe:
1 cup couscous
1 cup of hot water
1/2 cup red bell pepper, chopped
1/2 cup red kidney beans
Some spring onions
Some coriander
1/4 cup tomato, chopped
1 tbsp olive oil
1 tbsp lemon juice
Salt to taste
Pepper to taste
Add the couscous into a large bowl-
Next, add the olive oil and mix well.
Add hot water, cover and leave the couscous to soak for 10 minutes.
After 10 minutes, use a fork to fluff up the couscous.
Add the vegetables, salt, pepper, and lemon juice.
Finally, mix well.
This delicious couscous salad can be stored in the fridge in an airtight container and kept for 2 to 3 days.
