A bit of a tip. You need to heat it up longer, That way it doesn't stick to the teeth and just breaks apart.

When he says "children" or "son, " you feel like he is THE elder. It's super easy to like these two guys. He is one of the greatest fathers I've ever seen. God bless them both.

So there are two things you probably messed up:
1) you didn’t heat it up enough. 300 degrees F is hard crack, so you want it to be at 300 F when you put the fruit in. Some recipes say 275 to account for variance in your thermometer, but don’t do this. Heat it up to 300. Going over won’t make the sugar taste burnt, it will just be a tad darker
2) you most likely used the dragon fruit first. The dragon fruit slices you used have lot of water in them and don’t have a natural outer layer. Fruits with an “outer layer” are fruits like hawthorns, grapes, strawberries, and peeled(not cut) orange slices. What I mean by fruits with an outer layer is that these fruits aren’t wet or sticky when you hold them. They are relatively dry, and you can touch them and water doesn’t seep out. These fruits are specifically used in tanghulu because things like apple or mango or dragon fruit slices, which are high in water and have nothing to stop the water from interacting with the syrup, will ruin the sugar mixture by incorporating a bit of water into it. The sugar also struggles to stick to them because the water and ‘slime’ forms a bit of a layer between the fruit and the sugar. If you dipped the dragon fruit in first, it might have ruined the rest of the batch

U prolly didn’t heat it up long enough. You can test with a skewer by dipping it in the sugar then iced water. If it cracks the mixtures ready.

To reach cracking temperature sugar needs to be 300°F. Preferably 310

I love seeing people who are masters in one thing, try out something they’re unfamiliar with. My stepdad is an AMAZING cook, but he doesn’t mess with baking or candy making, that’s me & my mom’s specialty lol. Nearly burned down the house once making banana bread 😭

Reminds me of making candy apples in Home EC a zillion years ago (1969). IIRC, we used a cup of sugar and a cup of corn syrup, boiled it to the hard ball stage, added food color, and dipped the apples. We let it harden on lightly buttered wax paper. The candy dind't stick when it cooled.

I've made a lot of peanut brittle. The sugar temp is critical. The difference between peanut brittle and peanut taffy isn't very far apart. Plus, by the time it gets to hard crack temp it has thickened so much it's important to stir continuously to prevent burning.

The sugar wasn’t hot enough. Tip: to test if the sugar mixture is ready. use a chopstick and dip in sugar, then quickly put it in ice water. If it crunchy it’s ready to dip, if sticky then continue to let it heat up and try again until you dip in water again and it becomes hard.

Here's a tip I may not be an iron chef but I have made tanghulu before you need to get it to a certain temperature needs to be 300F or 150C then cold shock it. If it did stick it either did not harden enough or it was way too hot.

Making sure the fruit is patted dry with a towel. Use a candy thermometer to achieve the right temperature, and instead of completely submerging the fruit dip it in at an angle and spin it so that it lightly coats it use floral foam as stand to hold the skewers upright so that excess runs down the stick.
