How to Make the PERFECT Mac and Cheese Every Time

I’ve spent a year trying to find the best mac and cheese. It’s time to put everything I’ve learned to the test and make PERFECT mac and cheese!

✨Recipe:
1 lb pasta of choice
2 tbsp cornstarch
3 tbsp butter
3 tbsp flour
1 can (12 oz) evaporated milk
1 ½ cup heavy cream

Directions (See cheese and spice blends below):
1. In a large sized bowl shred all the cheeses and coat with cornstarch.
2. Boil your noodles until slightly underdone and set aside.
3. In a large pan on medium low heat, melt the butter before whisking in the flour until combined.
4. Whisk in evaporated milk then heavy cream little bits at a time. If you pour it all at once it could break the sauce or curdle.
5. Small amounts at a time, whisk in half of your grated cheese.
6. Add your noodles into your bechamel sauce and combine well.
7. In a 9x13 baking dish, place half of the noodles/sauce, then half the remaining shredded cheese. Add the other half of the noodles/sauce and then the remaining cheese.
9. Bake at 350°F for 20 minutes, then broil at 400°F for another 5 minutes.
10. Remove from the oven and let rest for about 5 more minutes, then serve and enjoy!

Blend 1:
1 lb mozzarella
½ lb sharp cheddar
½ lb smoked gouda
½ lb pepper jack
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp cayenne pepper
1 tsp smoked paprika
1 tsp mustard powder

Blend 2:
½ lb mozzarella
½ lb velveeta
½ lb sharp cheddar
½ lb white cheddar
½ lb colby jack
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp cayenne pepper
1 tsp smoked paprika
1 tsp mustard powder

Blend 3:
1 lb mozzarella
6 oz gruyere
½ lb white cheddar
½ lb monterey jack
parmesan to top
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp cayenne pepper (optional)
1 tsp thyme
1 tsp ginger

Blend 4:
½ lb mozzarella
½ lb velveeta
6 oz gruyere
½ lb sharp cheddar
½ lb white cheddar
½ lb colby jack
1 tbsp seasoning salt
1 tsp pepper

I'm a cheese lover. I rarely use spices, but the ones I enjoy most with cheese are nutmeg, paprika and white pepper. In that order.

Hear me out: all you need to make a standout Mac and cheese is salt, pepper, mustard powder, and a little bit of nutmeg. I use those spices, a mornay (bechamel + cheese) made with whole milk, and havarti and the most aged white cheddar I can find. It’s delicious. I like my Mac topped with breadcrumbs, so I bake it with a mixture of panko and extra cheese on top.

I use all evaporated milk, but I lactoferment it for 12 hours, not enough to solidify it, but enough to make it much richer and not as sweet

The way i eat mac n cheese is by taking the cheddar you find in burgers and melting it and putting it in the macaroni with pepper its actually so good

I made it and it was delicious!! I used Old Bay, pepper, mustard powder but adding the onion powder really made the difference for me. I also only ended up using about 4 oz of each cheese beside the Gouda and it was perfect!

I think all of them look amazing! The first texture experiment had a bit of cheese dripping down, so it’s sort of a cheese pull. Experiment numbers 1, 2, and 4 have a good cheese pull! Keep up the good work!

I had a similar idea a while ago and made a bunch of different mac and cheese recipes, and took things i liked from each of them and combined them into one recipe. I didn’t really love the recipes that has evaporated milk, so Im my recipe I use whole milk and double cream and it makes it so creamy and cheesy❤❤
