Lentil Soup/ Middle Eastern Recipe

This recipe was originated in the Middle east and very popular in countries like: Egypt, Morocco and Turkey
Usually Red or Yellow lentils used for this soup since they disintegrate and easy to blend.

Ingredients:

2 cups Red or Yellow Lentils(washes)
1 large carrot(cubed)
1 yellow onion(cubed)
1 red onion(finely diced)
8 cups of water or vegetable stock
salt and pepper to taste
some spices :1 tsp cumin, 1 tsp coriander, i tsp turmeric
2 tbsp chili paste or tomato paste
2 tbs cooking oil

Method:

In a medium pot, add cooking oil(i usually use avocado oil).
Saute onions to just soft stage and carrots.
Add spices.
Add washed and drained lentils, give it a little toast.
Then add: either water or vegetable stock. bring back to boil.
Add hot sauce or tomato paste.
Reduce heat and cook until lentils are disintegrated and mushy.(about 30-40 minutes)

Optional: Fry up red onion to golden brown in a small amount of oil.

When soup is ready, using hand blender turn it into creamy soup.
You can either combine fried onions with the soup or use it on top.

Sometimes chili flakes used for decoration and slices of lemon.

We (Turkish people) used to use sieves instead of blender in the old days. I find it more delicious when it is done with sieve to be honest and do lentil soup by using sieve when I feel strong enough :) Either way lentil soup is one of my favorite soups in any case. Thanks for the good recipe and I liked the red onion touch!
