- 6 large egg yolks
- 1 cup + 2 TB (111g) white sugar
- 1/2 cup + 1 TB (141g) freshly lemon juice
- 6 tablespoons (85g) butter (salted or unsalted)
- freshly grated zest (optional)

I add butter after curd is done, while still hot but off the heat., 1tbs at a time. It gives a silkier texture.

Actually the acid in the lemon allows the egg yolks to be cooked to higher temperature without curdling in addition to the sugar. Which is why you can cook lemon curd over a flame but you need to steam to eggs to keep them liquid other wise. This also why adding cream of tartare is always helpful to cooked egg whites for meringues or buttercreams.

I just made lemon curd stuffed cookies and omg. I have a new favorite. It’s hard because lemon curd defrosts in like seconds so you have to work fast but other that that it’s so easy
