I got another How to fillet video for you guys! This time we have a beautiful big Red Snapper which also goes by the names (Genuine Red and American Red Snapper). Red snapper are deep water snapper often inhabiting depths 200 plus feet. Red snapper can be eaten whole or filleted, and make some of the best table fare and are one of Florida's best eating fish.

I taught myself how to filet fish when I was at the young age of 7 or 8, I'm 57 now, For the most part I do it the way you do it except for the rib cage, that part I have just learned, I guess you can teach an old dog new tricks! thank you.

Dont throw away fish head especially the snapper ones, they make good 'fish head curry' . Fish head curry is a highly priced food in asian restaurants.
I will give some tips on making one.
1. clean head take of the gills and unwanted parts.( cut in half or cooked whole.Do not cut it in small pcs.)
Ingredients
1.Oil (prefered veg C.oil )
2.Fenugreek 1 tea spoon
3. fennel seed 1 tea spoon
4. Cumin seed 1 tea spoon
5. Onions 3 medium
6. Tomatoes 3
7. Curry leaves handful
8. Green chillies 3
9. ladies fingers 4 or 5
10. Tamarind juice 1 medium bowl
11. Red chilli powder 1 table spoon
12.Corriander powder 2 table spoon
13. Turmeric powder 1 tea spoon
14. Salt to taste
15. Sugar a little to bring that jest.
Cooking method
Oil in Pot heated, throw in fernugreek, fennel and cumin till a little brown, throw in onions and curry leaves - let brown a little, than the tomatoes(diced) Green chillis (split in med) ladies fingers, cook a little.Add tamarind juice(sour to taste) let it simmer add chilli powder, corriander powder, turmeric powder and let it boil.
Add salt and little sugar and continue to boil, put in the fish head 15mins later add corriander leaves and spring onions (chopped).
YOUR FISH HEAD CURRY IS READY!
Eat it with rice, bread etc.

Good how to—it’s how the charter boat deck hands do it for speed. I sometimes go to the cleaning tables and ask for the carcass, there’s good stuff left over and the guys are usually happy to give it to you

I usually make all my cuts, 90% finished on one side but leave it attached. When you flip it over its nice and flat, not concave. Makes that second fillet as easy to cut as the first.

Ok take me and Skywalker fishing and between the two of us you'll be the best fish cutter on youtube lol. I was a cutter for years at a seafood distributor, I can show you one simple trick to make your fillets come out better and other cuts you can do to have some more great cooking videos. Not at all that you do a bad job, I really like the cooking you and Brook do. Take Care

Would be cool if u did a waste free fillet video and try to utilize as much of the fish as possible. Ideas: Maybe make a soup with head and bones. Serve grilled collars.. fry off the fins.. if you are adventurous you can even fry the scales. Seen japanese guys do that. You wash them, dry them on a rack underneath a fan overnight, then fry the next day.

Great fillet, I have some recommendations if you want to try this
-bleed the fish, it’ll improve the taste and filleting will be less gory
-get a stiff knife, it’ll help you make cuts where you want to to as opposed to a flimsy knife
- don’t throw away the head and collars, they make excellent curry
- scale the fish if you don’t want to create a mess or making sushi

If you ever get an offer from wusthof knives, you should try out the classic filleting knife. That german steel just makes everything so easy!
