Low Carb Mini Quiche Recipe

This is a low carb mini quiche recipe that is perfect for breakfast or snaking anytime. These are perfect for meals on the go.

Ingredients

5-6 slices cooked bacon
cheddar cheese
1 red bell pepper
8 large eggs
greased muffin tin

First pre heat oven to 350 degrees
Next cook the bacon
Chop up the bacon and red bell pepper
beat 8 eggs together

pour the egg mixture in the muffin tin filling each one about halfway. Next put a pinch of bacon and red bell pepper in each one followed by some cheese. Bake in the oven for about 20 minutes or until you can put a toothpick in and it comes out dry. Enjoy

@theasotchannel I eat them cold sometimes for breakfast. Its an easy breakfast on my way out the door to work.
