We just put a few diapers in the diaper bag then buy diapers when we get to our destination. As well as anything else we use up like toss and go sippy cups, snacks etc.

Love your ideas! I have a two-year-old and a four-year-old and I plan on using two packing cubes for each of their clothes and diapers and a wipes separate in a packing cube...and I'm traveling for five days.. i'm wondering if five pairs of clothes will fit in a packing cubes each!
