Lactose Free Quick Mozzarella Made with Real Milk

Another fresh cheese that can be adapted to be lactose-free is Quick Mozzarella. I was unsure if it would work at first, but we (Amy and I) persisted and it turned out fine in the end.

Non-Microwave method
If you don't have a microwave, you may want to put on heavy rubber gloves. Heat the reserved whey to at least 80°C (175°F). Add ¼ cup of salt to the whey. Shape the curd into one or more balls, put them in a ladle or strainer, and dip them into the hot whey for several seconds. Knead the curd with spoons between each dip and repeat this process several times until the curd is smooth and pliable. There is no need to add additional salt. Finish off with the ice bath for 15 minutes.

I tried using Coles lactose free milk and ended up with 10 litres of warm milk! I had to put more mesophilic culture in it and leave it make tvorog. Not sure how that will go. Next time I will get Zymil milk. I suspect the Coles lactose free milk is actually UHT masquerading as fresh milk. My rennet was new so it couldn’t have been that. Thanks for all your videos Gavin. No one else does anything even close to this.

You are supposed to put cotton gloves under the nitrile rubber ones to protect from heat. Rubber gloves alone aren’t enough

If I want to make a slight about half as much is that literally halving everything or do the non-milk bits added in still need to be as much?

Now try lactose free mild cheddar. That would would be the bomb. Can you convert regular milk to lactose free at home?

Since you're already adding enzymes, could you do this with regular milk and add lactase?
