Ever wondered what goes on inside a Parmigiano producer?
Each wheel takes 500 litres of milk to make and must be matured for an absolute minimum of 12 months, but can be matured for up to three years. A finished wheel weighs over 80 lbs. Don't confuse this King of Cheeses with what's sometimes called 'Parmesan' in the USA - that's not the real deal. In the video you'll see how a wheel of Parmigiano gets its distinctive markings that serve as its passport as it travels the world.
