If, like me, you have bought frozen egg roll wrappers (sometimes called spring roll wrappers) and had to throw half of the packed because you just used a dozen of them, you will love this recipe!

Recently, Vân, my Vietnamese wife, taught me how to make egg roll wrappers from scratch. I was MIND-BLOWN. « It’s that easy?! » I told her. Making egg rolls at home only requires flour, salt, baking powder, and water. Today, I’m pleased to share this technique with you all! 

Equipment:

Ingredients:
125g all-purpose flour
1/8 tsp baking powder
1/8 tsp salt
200ml water

3cup water mix well in blender.rest gor5minutes then .grees slightly nonstick frypan.put some batter spread in pan then remove after setting

I stayed at a villa and they used basically this same recipe, except they ladled in the slurry. It came out to about twice as thick, and it released itself from the pan as it was cooked, then they flipped it to cook the other side. I think the thicker ones will be a bit better and that's how I'll make mine. I just came for the exact measurements on the flour and water. Thx.

Does adding egg give it that rough bubbly texture? This technique looks convenient but the final product doesn't look like dark bubbly crust of American Chinese takeout eggrolls I'm looking for.
