Wonderful content! I appreciated the discussion of evolutionary adaptations. I never quite noticed the difference between the digestibility of raw fruits and raw vegetables. There is also the presence of substances in raw forms of vegetables and legumes that act as enzyme inhibitors, but are fortunately thermolabile (breakdown/are inactivated with heat). Thanks for the endless knowledge :)

Agreed. Silly debate given the fact that a majority of people don’t eat nearly enough vegetables. Eat them raw, steamed, boiled, or baked...just eat plenty of them. Once you’re at the point where you’re eating 8-10 servings per day, then you can start looking into which vegetables are better eaten cooked vs raw and also how to prepare them to maximize their health benefits (tip: pre-chop your broccoli 45 minutes before you cook it).

If it's dangerous to eat certain vegetables and grains raw, then maybe this is a sign that we shouldn't be eating them. Just a thought...

Broccoli, wheat, and grains are not the best vegetables for digestions regardless. Broccoli is not even considered a real vegetable….
