After an incredible summer at Kew exploring the future of food, we spoke to a selection of artists, chefs, scientists and horticulturalists to hear what they think our favourite dishes will look like in decades to come.

By 2050, a global population of 9.8 billion will demand 70% more food than is consumed today. Feeding this expanded population nutritiously and sustainably will require substantial improvements to the global food system – one that provides livelihoods for farmers as well as nutritious products for consumers.
In fact, production of beans, lentils and nuts is expected to increase nearly 100% to 200% by 2050, while red meat protein sources are expected to decrease in production by about 75%. 1:58
