Homegrown Kosher's Potato Kugel

Ingredients:
5 lbs yellow potatoes, peeled 
2 large onions, chopped
2 Tbsp kosher salt
Freshly ground black pepper to taste 
6 eggs
2/3 cup oil

Instructions:

Preheat oven to 425
Puree onions in food processor. In a medium bowl combine with egg, salt and pepper. Add some oil to the pans you will be using. (About 4 Tbsp for a 9 x 13 or 2 each for the 9 x 6 pans) and mix the rest of the oil into the onion mixture. Set aside.

Place pans with oil in oven to heat oil.
Shred potatoes in food processor in batches if needed. Remove potatoes to a bowl and then pulse in batches (about two handfulls each) until potatoes are finely chopped but not pureed. 

Pour potatoes into a strainer set over a bowl to drain some of the water. Combine strained potatoes in a large bowl with the onion mixture. Pour off water and add any accumulated starch to the kugel batter.
Pour kugel batter into preheated pans. Bake for about 1 hour and 20 minutes until brown.
