Just ate my Panna Cotta made according to your recipe and it is really spectacular, but I think a little bit of acidity would make even more delicious. What do you think of adding a teaspoon of lemon juice?

Vanilin survives high heat. But all the other flavors of real vanilla are destroyed by high heat. It's a waste. Try adding the vanilla bean at the very end, just like the other extra flavors. You might be surprised by how much more complexl it tastes.

Thanks. That reminded me that I was gonna do a layered espresso panna cotta something. Might have to do gelatin in that one to make them stick together.

I also realise that my air distiller can be used as a sous vide if I place something in the bottom of the pot.
