My personal headcanon is that this time traveler is actually Smokin' Joe Rudeboy. He goes to the past with dreams of fame for "writing" Shrek 2, but those dreams fell through. He became despondent and jaded, eventually acquiring the fame he sought, but not for the reasons he intended: having the fastest fingers in the whole wild west.

I absolutely love how the "I'd die pretty quick/rattlesnake bite my hand" joke is a direct parallel to "keep your feet off the grass/shine your shoes wipe your face" joke, also from Shrek 2, one of my favorite jokes in the movie!
