What is shell ?
The shell is a program that executes other programs.
Which shell should i choose ?

BASH
Bash is the most common Linux shell out there. If you open up a terminal on Mac (until macOS Mojave), or if you’ve used Linux before, you’ve seen Bash.
Despite it's limited set of configurable options, it is widely used, and it has a huge number of users accustomed to its usage and have good online resources.

Zsh
Zsh is similar to Bash and is another great shell. It’s faster and much more customizable than Bash.
One of the coolest things about Zsh is color customization. You can change the theme and color of your shell just by using a framework called Oh My Zsh.
Zsh also has a lot of other useful features, including spelling correction, sharing your command history across multiple terminals, naming directory shortcuts, etc.

Fish
Fish, or the “Friendly Interactive Shell,” is the most user-friendly and interactive shell.

It is much more customizable than Zsh and Bash. It has a ton of cool features like consistent syntax, nice tab completion and syntax highlighting, is easy to pick up and use, and has excellent runtime help.
You can change the theme and color of your shell just by using a framework called Oh My Fish.

You can run Bash scripts in both Zsh and fish by adding the following shebang line to the first line of your Bash file.
#!/usr/bin/env bash

So if you want customization then stick with Fish or Zsh
But bash is much older and is more popular, whereas Fish and Zsh are more recent.

bash- Well estabilished shell with many online resources
Zsh, Fish- More features but less resources compared to bash.

How would I go about doing a dual boot install with this. I’m assuming ofc no to installing the boot loader and installing grub after it’s done installing. But do I have it have a separate boot partition ?

Downvote without even watching, what's the point of these silly scripts to install Arch ? It's not the first one btw, after that people who didn't even read the Archwiki come asking obvious questions on the Arch forums and complaining because things are broken, Arch is a DIY distro there is no point making GUI tools available.
If you want an arch like experience and are not comfortable using the command line go for Manjaro and if you're just lazy to reinstall your system go for Arcolinux.
