by the way Dr Gundry I saw a small clip of you from the Dr Oz show with Dr Kahn from a couple of years ago and I thought you behaved like a total gentleman. I felt like Kahn was trying to upstage you when there was no reason to. You smiled the whole time with a "I don't need to prove anything to you" posture and I loved it. You said "it's how well you live for a long period of time". You've further explained that the cultured with the longer lives have things in common despite eating foods with lectins. I'm proud that I found your books and that show further proved to me that your only agenda is to educate, not to showboat.

My grandmother would always treat three vegetables with salt before cooking or eating them: cucumbers, eggplant, and potatoes. Her reason: She said that the salt "kills the poisons" in these foods.
For cucumbers and eggplant, she would peel and slice them, then sprinkle salt over them to coat them on both sides, cover, and leave them to sit a few hours or so. Then she would rinse the salt off before preparing or cooking.
For potatoes, she would peel and chop the potatoes up, then put them in a bowl of water with salt added and let them sit a few hours or so. When it came time to cook the potatoes, she would first rinse off the salted soaking water, then bring the potatoes to a boil in fresh water, then turn down to a simmer. At that point, a white foam would come to the surface of the water, and she would scoop that off, then continue simmering the potato until done.
Years ago, I lived in a macrobiotic study house and later took macrobiotic cooking classes as well for a few years after that, and learned how to cook beans in a pressure cooker. First the beans would be soaked overnight. Then the beans would be brought to a boil in unsalted water, then simmered, until that same foam surfaced that I had seen come to the surface when I was a kid when my grandmother was cooking potatoes. The foam was also scooped off in macrobiotic cooking, just like my grandmother did. In macrobiotics, the reason for scaping off this film was that it contains indigestible sugars. Then they would put a piece of kombu seaweed in the pot which they explained as "helping to cook the beans." Then they would place the lid on the pressure cooker to bring up the pressure to fully cook them, usually for about 45 minutes or so. Salt was added only after the beans were fully cooked.
And in macrobiotics, three vegetables are never eaten: tomatoes, potatoes, and eggplant.
So are these good ideas? Pretreating cucumbers, eggplant, and potatoes with salt and for beans, the soaking, pressure cooking beans with kombu seaweed and adding the salt last. How about the scraping off of the white scum like material that potatoes and beans exude?

Looking forward to feeling better.I suffer with PTSD, Depression, Anxiety, Bipolar, Psoriatic Arthritis, Fibromyalgia and vitiligo.I can’t seem to get any relief with what my many doctors prescribed.Listening to Dr. Steven Gundry gives me hope.

Dr. Gundry. I applaud you! As a practicing MD to go beyond chemical patchwork of pharmaceuticals and other options of surgery. You sir, are a TRUE health provider. Thank you for restoring my faith in the medical field a little 😉. I ordered the Plant Paradox and can't wait to get it. I'm a lifetime vegetarian.... no this will help me understand better why I do what I have and what I can do to take it steps further. I eat to live not live to eat. That's my motto.

Many thanks Doc, the Plant Paradox diet has greatly improved my quality of life. Dropped BP, lost 25 pounds without being hungry, , fasting glucose down to 85, At almost 60, this is the best I’ve felt in 20 years

Lectins, gluten, sugar, dairy...everything seems to cause inflammation. What is one to do? How does one find out what’s really causing inflammation? We can’t just stop eating everything!

I've been on lectin free diet since I first heard about you two years ago. After 15 years of having allergies, they are gone. This is just one of the many health benefits.

Theres a deep feel of healing in me. I am looking forward to my antibody test in 3 months.

I have been eating a vegan diet for 40 yrs with no deleterious effects that I know of. I am now 60yr old, feeling great and looking much younger. Obviously this is anecdotal and I can't speak for others that follow the same vegan diet. Your (science based)take on diet is very interesting and I plan to obtain the book very soon. many people come to me for advice on diet and I am always trying to explain that what I do is not to be duplicated as everyone is different and with the newly found data on the microbiome, it becomes obvious. I do try to give general ideas about a healthier diet, but i don't push for the stricter vegan diet. I know your book will add to my knowledge and possibly help others to identify the source of their ailments. Thank you sir.

The sign of greatness and integrity is the willingness to shed past teachings and doctrine and change course based on continued learning. This is RARE beyond belief. Especially in the medical, science and academic fields. This man is an life-time achiever beyond belief. I am not agreeing with all he teaches. I see questionable leaps in his conclusions. Question everyone and do your own research. My opinion of Dr. Gundry keeps growing.
